plate of deliciousness

Olive Garden Fetticini Alfredo:

1/2 stick butter
1 pint heavy cream
2 tbs. cream cheese
1 tsp. garlic powder
3/4 cup parmesan cheese

melt the butter in a pan, then add cream cheese. when cream cheese is softened, add the heavy cream. simmer for 15-20 minutes. Add the parmesan cheese & garlic powder. Season with salt and pepper. Makes 16-20 oz. of fetticini pasta.

next step: eat this scrumptious meal.

TIP: we had a caesar salad first & cooked some garlic bread to go with the pasta dish. mmmm.

note: our power in the kitchen went out while finishing this meal. {hunter fixed the breaker on the side of the house & got the lights back on} i had doubled the recipe & the sauce wasn't thickening. the cooks of the yellow apron helped me...a LOT {even in the dark for a few minutes} and it was delish!!! thanks ladiiiies.

cilantro-lime chicken + easy peasy mini cheesecake.


cilantro-lime chicken-
6 chicken breasts,
1 can of chicken broth,
2 tablespoons sourcream,
1/2- 1 bunch of cilantro,
2 limes,

combine broth and sourcream into a crockpot and stir, squeeze lime juice, cover the chicken in the liquid and add the cilantro on top. (you might need another can of broth/water depending on the size of your chicken.) leave in the crockpot on low for 6 hours, or high for 3 (depending on the crockpot.) makes alot, but this chicken freezes and defrosts well.

(taco shells are corn tortillas fried in vegetable oil)

easy-peasy mini cheesecake:
crust:
2 packages graham crackers
1 cube butter
1/2 cup sugar
smash graham crackers in ziploc bag, add melted butter and sugar. form mini crusts in a ungreased muffin tin. (if crust doesn't form, add more butter)
filling:
small tub of whip-cream
one block of cream cheese
1/4- 1/2 cup of sugar
MIX WELL. :)
add to crust and let sit in the fridge for half of an hour - an hour. serve plain or with pie-filling.

kate's salsa + blender guacamole.


kate's salsa:
(makes enough to feed army)
8 tomatoes,
1 onion,
1 bunch of cilantro,
1 clove of garlic,
2 fresh jalapenos,
1 can of el pato,
half of a lime,
1 tablespoon crushed red pepper,
salt to taste.
combine everything in a food processor and chop (squeeze lime juice)
blender guacamole (from here)
2-3 avocados,
1 and a half cups of milk,
1 clove of garlic,
half a lime,
1/2 a bunch of cilantro,
salt to taste
pit avocados and put everything in a blender until creamy.

Peasant Pasta

Mmmm mmmm mmm.  Tonight's dish was peasant pasta and it seemed to be a hit!  Here's how to get your cook on:
What you'll need:
1 tablespoon extra-virgin olive oil, one turn of the pan
1/2 lb hot Italian sausage (2 links, casings removed)
1 lb sweet Italian sausage (4 links, casings removed)
3 to 4 cloves of garlic, chopped (or garlic powder)
1/2 cup vegetable broth or chicked broth
1 (28-ounce) can crushed tomatoes
1/2 cup heavy cream
1 cup frozen peas
24 leaves fresh basil
1 lb penne pasta
grated Italian cheese

How it's done:
Heat a large, deep skillet over medium high heat.  Add extra virgin olive oil, 1 turn of the pan.  Add sausage meet.  Crumble meat as it browns.  Add chopped garlic to the pan.  When all of the crumbles have browned evenly, deglast the pan drippings using chicken or vegetable broth.  Stir in crushed tomatoes and bring the sauce up to a bubble, then reduce the heat to a simmer.  Stir cream into your sauce, this will blush the color and cut the acidity of the tomatoes.  Season with saalt and pepper.  Stir pease and basil into your sauce.  Toss hot drained penne into pan with sauce.  
This recipe was taken from foodnetwork.com.  It serves 6 people and only takes about 15 minutes including preparation and cook times.  Enjoy!

Heaven on a plate.



Okay this was my first dish because it's amazing, and simple, and turns out delicious every time. So if you're a failure when it comes to cooking... this one's for you. 
Easy + Sooo Yummy = Cami's Favorite

Tuna Casserole

Ingredients:
  • 1 Bag of shell noodles
  • 2 cans of tuna
  • 1 can of cream of mushroom soup
  • 1/2 cup sour cream
  • orange cheese :) (as much as you want)
Directions:

Boil noodles until al dente (to the tooth, gotta love Martha Stewart), or just read directions on the noodle bag. Pre-heat oven @ 350. In a large bowl, mix tuna, cream of mushroom soup, sour cream, and some cheese if you'd like. After noodles are cooked and drained, add to tuna mixture and transfer to casserole dish. Cover top with cheese and cook in oven (where else) for 20 minutes. You're done! Wasn't that easy! haha


Now for dessert.....

Fake Fried Ice Cream

Fake you ask? Yes fake because I have no idea how people fry ice cream?? But ask any one of the girls, it's good eats and even easier than the casserole...if you can believe that.




Ingredients:
  • Any ice cream (I use vanilla, but this could probably be even more amazing with something more daring)
  • Cinnamon
  • Granulated Sugar
  • Corn Flakes
  • Honey (optional)
  • Whipped Cream (optional but goooood)
Directions:

Mix cinnamon and sugar in a small bowl. Crush corn flakes on a cookie sheet, preferably with a lip (cuts down on the mess). *Warning* your hands are soon going to become very cold, but believe me it's worth it.  Using an ice cream scoop, roll ice cream into balls, roll in cinnamon mixture, and then in corn flakes. Make sure to have a casserole dish ready to place them in to store or serve. Douse with a squirt of honey and whipped cream and vuala! Delicious and bad for me all in one!

I guess since I did the first meal I'll explain what's going on. We're a group of girls that have significant others that enjoy eating. Sooooooo, since we weren't blessed with a book of cooking knowledge we decided to start sharing recipes that we know are good... some of us (me) have a fear of trying new recipes, more like a fear of failure, so this has been awesome. So we each take a Monday and then post some pics and the sweet recipe we shared. We hope many beginners benefit from our collection! Enjoy.
